Easy Dessert Quesadillas

  • fruit sauce (apple, cranberry, pear, etc) or compote or sliced fresh fruit

  • goat cheese

  • honey

  • cinnamon

  • fresh ground nutmeg

  • plain tortillas (white or whole wheat)


- cream goat cheese with honey, cinnamon and fresh ground nutmeg until it has a spreadable consistency and tastes how you want it
- spread an even coat of the sweetened goat cheese onto two tortillas
- place one tortilla, goat cheese spread up, onto a cookie sheet and spoon some of the fruit sauce (or arrange fresh fruit slices) onto it, making sure not to go to the edges
- place the second tortilla, goat cheese spread down, on top and seal the edges
- place under broiler for a few mintues until they're however toasted and brown you want them
- cut into slices and serve


I made this the other night to rave reviews. It's tart and sweet and rich without being heavy or filling. And if you use the smaller sized tortillas, everyone you're making this for can get one of their own.
