I love the oatmeal cookie recipe I have. I consider it my mom's, even though it likely came from the back of a bag of oats originally. There were a lot of oatmeal cookies growing up. So much so, I have a hard time finding any other oatmeal cookie (that is not homemade) as tasty or as nice.

I love it's versatility. If you can put it in a cookie (or even if you can't), it can go into this cookie. Pieces of fresh apple? Sure. Berries (fresh, dried or frozen)? Why not. Chocolate chips? Raisins? Of course, they're classics. I've had cookies made by my mom that were so loaded, they were mostly stuff and not so much cookie. :)

The recipe calls for 1 tsp of cinnamon (something I tend to double right out of the gate), but I vary that according to my whim. Sometimes it's just cinnamon, sometimes cinnamon and ginger, sometimes cinnamon, ginger and freshly grated nutmeg. I make a Christmas variation that involves using orange extract instead of vanilla, cranberries, cinnamon, ginger and clove.

Today, in order to use up some stuff that's getting a touch on the old side (as in edible, but needs to be used sooner rather than later), I made two separate batches: one of coconut raisin and the other of coconut, raisin, chocolate chip.

And my oven just beeped. The last batch is done. Mmmm...warm cookies...:D
